RECIPE: HOW TO MAKE SUPREME SOY SAUCE NOODLES 豉油皇炒麵

Supreme soy sauce fried noodles, a typical Cantonese fried noodle dish, don't take long to prepare. Supreme soy sauce fried noodles are a type of fried noodles in Hong Kong, commonly found in Hong Kong restaurants, Cha chaan tengDai Pai Dong, and porridge shops. The ingredients needed for Soy Sauce King Fried Noodles are simple and easy to make. Soy sauce is mainly used as a seasoning.
The smoky hot fried noodles tossed in a savory sauce were definitely worth trying.

I was so inspired by this Instagrammer who always makes these yummy-looking supreme soy sauce noodles. I used egg noodles that I bought from redmart. hahaha. My version comes with carrots and luncheon meat. I also steamed some dumplings to go with it.  Actually, this is kind of similar to braised noodles not as saucy. Shall just post the recipe for the sauce here as you can basically make this with any kind of noodles. I don't think you specifically need egg noodles for this. This is totally not salty at all.

Ingredients
1 cake of Hong Kong style pan-fried noodles (buy the unsteamed variety)
5 pieces green onion
3 tbsp corn oil

Sauce:
2 Tbsp water
1 Tbsp light soy sauce
1 Tbsp dark soy sauce
2 tsp oyster sauce
sesame oil, to taste

Method: 
1) Prepare the noodle according to the package directions. Drain and rinse under cold water before continuing with the preparation.

2) Gather the remaining ingredients.
Green onions should be chopped into small pieces.
I used carrots and luncheon meat here. They are chopped into slices.

3) Cook the carrots and brown the edges of the luncheon meat in a stir-fry.

4) Get the sauce ready.
In a bowl, combine dark soy sauce (1 tbsp), light soy sauce (1 tbsp), oyster sauce (1 tbsp), sugar (2 tsp), and water (1 tbsp).
Later, we'll add the sesame oil.

5) In a large skillet, heat the oil over medium-high heat. Swirl the oil around in the pan to coat it. Toss in the noodles. Allow around 3 minutes for the bottom to crisp up.

6) Flip the noodles over and drizzle extra oil around the edges. Allow the noodles to simmering for an additional 3 minutes, tossing them regularly.

7) Toss in the remaining ingredients and stir thoroughly.

8) Cook for 1-2 minutes after adding the green onions.

9) Pour in the sauce mixture and stir well for 1 minute. 

10) Add 1 teaspoon sesame oil, then stir and separate the noodles for another 1-2 minutes before plating.

11) It's time to eat!
