Tofu Risotto

Another kind of risotto ✨ I made tofu risotto this time. Anyone has any new risotto recipes to recommend? 😻 I also added ham and broccoli. You can add anything you like in it. It doesn't have to be just Tofu.

Ingredients
- 1 cup Diced tofu
- 1/4 cup White Button Mushroom
- 1/4 cup Arborio rice or Normal Rice?
- 4 1/2 cups Chicken stock
- 1 tablespoon Butter
- 1 tablespoon Olive oil
- Melt butter and oil in large frying pan, add mushrooms saute until golden.
- In same frying pan, saute tofu until golden on all sides, you might want to add more olive oil and butter.
- Add all the rice to the pan. Sauté for a minute or so on a medium heat.
- Add enough of the stock to just cover the rice and cook, stirring, until the stock has been absorbed. Continue adding the stock 1/2 cup at a time, and stirring constantly, until it is nearly absorbed between additions. The risotto is done when the rice is al dente and suspended in a thick, creamy sauce, about 25 minutes.
- Finally stir in parmesan cheese until it melts and risotto becomes creamy.
