Tofu Risotto

Another kind of risotto ✨ I made tofu risotto this time. Anyone has any new risotto recipes to recommend? 😻 I also added ham and broccoli. You can add anything you like in it. It doesn't have to be just Tofu.

Ingredients
  • 1 cup Diced tofu
  • 1/4 cup White Button Mushroom
  • 1/4 cup Arborio rice or Normal Rice?
  • 4 1/2 cups Chicken stock
  • 1 tablespoon Butter
  • 1 tablespoon Olive oil
Cooking Directions
  1. Melt butter and oil in large frying pan, add mushrooms saute until golden.
  2. In same frying pan, saute tofu until golden on all sides, you might want to add more olive oil and butter.
  3. Add all the rice to the pan. Sauté for a minute or so on a medium heat.
  4. Add enough of the stock to just cover the rice and cook, stirring, until the stock has been absorbed. Continue adding the stock 1/2 cup at a time, and stirring constantly, until it is nearly absorbed between additions. The risotto is done when the rice is al dente and suspended in a thick, creamy sauce, about 25 minutes.
  5. Finally stir in parmesan cheese until it melts and risotto becomes creamy.
